Steak and Smashed Potatoes

Another Fresh20 favorite!
I seriously didn’t realize that steak could be this good.
Serves 4
Ingredients:
For smashed potatoes:
1 lb. baby red o gold potatoes (abt 8)
3 Tablespoons extra virgin olive oil
1/2 tsp paprika
1 teaspoon Herbes de provence
1/2 tsp kosher salt
1/4 tsp black pepper
For Steaks:
1 and 1/2 lbs boneless New York strip steak or boneless rib eyes
1/2 tsp kosher salt
1/2 tsp black pepper
1 Tablespoon Herbes de Provence
1 Tablespoon Grapeseed oil
For smashed potatoes:
1. Preheat oven to 450 degrees
2. Place rinsed potatoes into the microwave and cook on high for about 5 minutes or until just cooked through and fork tender (potatoes can also be boiled on stovetop).
3. In a small bowl, combine olive oil, paprika , Herbes, and salt and pepper, set aside.
4. Line a baking sheet with parchment or foil and lightly brush with olive oil.
5. Place potatoes onto baking sheet and with the bottom of a heavy cup or small plate, press the potatoes down until they are smashed. Leave enough space between potatoes-crowding will keep them from becoming crispy.
6. Brush the top of each potato with olive oil/seasoning mixture and place into the top rack of the oven for 20 minutes or until golden and crispy.
For steaks:
1. Preheat oven to 450 degrees.
2. Season steak on both sides with salt and pepper and Herbes.
3. Heat a large , nonstick, oven proof saute pan (cast iron skillet works best) over medium-high heat. Add 1 Tablespoon of grapeseed oil and once hot (almost smoking) add in steak and cook for 2-3 minutes per side or until a golden crust forms.
4. Place pan into preheated oven and cook for about 4 minutes for rare, 8-10 minutes for well-done. Cooking time will depend on the thickness of your steak, adjust accordingly. Do not cut your steak right when you pull it out, a rare steak right out of the pan will be medium rare after it has had time to rest. In other words, your steak will continue to cook after you pull it out of the oven and it is resting.
