Artichoke Nibblers

This is a favorite from visiting the Annibale’s house for parties!

2 6 oz. jars marinated artichokes

1/2 medium onion finely chopped

1 clove of garlic

4 eggs beaten

1/4 cup dry bread crumbs

1/2 tsp. salt

1/8 tsp. pepper

1/8 tsp. oregano

2 tablespoons parsley

1/8 tsp. Tobasco sauce

1/2 lb. sharp grated cheddar cheese

Drain marinate from 1 jar of artichokes into skillet. Drain and discard marinade from 2nd jar. Chop artichokes. Set aside.

Saute onion and garlic in marinade for 5 min. Remove from heat. Combine all ingredients. Pour into buttered 2 qt. shallow casserole dish. Bake at 325 degrees for 30 minutes. Cool and then cut into 1-inch squares.
