Crab Salad Toasts

A Fresh20 recipe! Super easy to make.

Serves 4

Ingredients;

16 oz lump crab meat

1 green bell pepper, chopped small

4 scallions, chopped small

2 stalks celery, chopped small

1 cucumber, chopped small – peeled first

1/4 tsp black pepper

1/4 cup low-fat greek yogurt

1 tsp Dijon mustard

Dash of cayenne, optional

2 avocadoes, diced

2 Tablespoons lime juice

1/4 cup chopped cilantro

Combine all ingredients and serve on toasted whole wheat rolls. Also tastes good by itself. We tried it with hot sauce too and it was so yummy!!

We ate this with tomatoes and olive oil and salt and  balsamic vinegar on the side. 🙂
