This is Greg’s recipe from one of my dinner club parties. Everything he makes is tasty, but he rarely gives us the recipes for any of his concoctions. Here it is:

You’re gonna need some garlic, canola/olive oil, fresh lemon juice, and salt (and a food processor).

Put a handful(~1/2 cup) of shelled garlic cloves, a pinch of salt, and lemon juice (~1/4 cup) in food processor. Alternate processing a
nd scraping down sides until fully mixed.

Now turn on processor and drizzle oil in slowly (you’re making an emulsion); I drizzle about 1/3 cup at a time and then scrape. After about a cup, you’ll start to get the consistently you like.

You can roast the garlic first which reduces the sharpness. You can probably add up to 1 1/2 cups of oil (or more), but I generally stay around a cup.
