Grilled Chicken Bruschetta with Pasta

Serves 4

Ingredients:

1 lb boneless skinless chicken breasts

1 Tablespoon grapeseed oil

1 tsp Herbes de provence

4 cloves garlic, minced (divided)

1/2 tsp kosher salt (divided)

1/2 tsp black pepper (divided)

4 tomatoes (chopped)

2 medium zucchini chopped

1/2 cup chopped basil

2 tablespoons olive oil

1 tablespoon balsamic vinegar

4 cups cooked whole wheat pasta

1/2 cup crumbled feta cheese

1. Mix oil, Herbes, half of garlic, salt and pepper in a small bowl. Brush onto chicken. (Before you brush this on, you may also want to use a meat pounder to flatten out the chicken breasts so that they cook better. )

2. Heat a stovetop grill pan to medium heat.

3. Cook chicken breasts for about 5 minutes per side, Internal temperature of chicken should be 165 degrees.

4. In a bowl, combine remaining garlic, salt and pepper with tomatoes, zucchini, bell pepper, basil, olive oil and vinegar to make bruschetta.

5. Serve chicken topped with bruschetta over pasta. Top with cheese if desired.
