This is an old favorite of mine that my friend Lizzy Fetchin gave me. Quick and easy!

6 boneless, skinless chicken cutlets

salt and pepper to taste

1 cup of sesame seeds

2 tablespoons olive oil

1 tablespoon butter (or use all olive oil)

Sprinkle salt and pepper on both sides of the chicken cutlets. Put the sesame seeds in a bowl; dip chicken into sesame seeds and press so that the seeds stick to the meat. In the meantime, heat the oil and butter in a skillet over medium heat. Add the chicken one cutlet at a time to the pan, cook for four minutes on each side, or until golden brown.
