Cooking Time:  2 – 3 hours

Marinading Ribs:

– 1 packet per 1 rack of ribs

– Pour packet of Mama Sita’s Sinigang soup mix powder (it can be a different brand of sinigang soup mix if you can’t find this one)  in bowl and mix in 1/3 – 1 cup of olive oil to powder (less oil will make ribs more salty)

– Add 1 tbsp of black pepper (optional)

Cooking Ribs:

– Preheat oven at 400 – 425 degrees (depending on how much time you have to cook)

– Place rack of ribs on a cookie sheet (plain, no marinade yet b/c high heat will burn the marinade) in oven and cook for 15-20 minutes (15 minutes if 425, 20 minutes if 400)

– If you have a rib rack to elevate at a 45 degree angle, use it so that both sides of ribs will get cooked; if not, then flip ribs over mid-way through

– Take ribs out and lower temperature to 350 degrees

– Using brush, baste ribs with marinade on both sides (don’t use all of marinade at once, leave a little left to add later) and cook ribs for 45 minutes

– After (total of 1 hour cook time), lower temperature to 300 degrees

– Use remaining marinade to baste ribs again and cook ribs for 90 minutes (or 325 degrees if you only have an hour)

– Take ribs out to check tenderness; if ready, cut ribs after fully cooked and serve immediately/  If not, lower temperature to lowest possible and keep in oven until ready to serve.
