Mom’s Chicken Wings

30 chicken wings , about 5 pounds

1/4 cup all-purpose flour

1 teaspoon garlic salt

1/2 teaspoon black pepper

Vegetable oil

For sauce:

1 stick of butter

1/2 cup hot sauce- only use Frank’s red hot sauce

1 Tablespoon cider vinegar

Blue cheese dressing (recipe follows or you can buy this)

Celery and carrot sticks

Cut off small tip from each wing and discard. Cut each wing into two pieces. Wash and Pat dry.

Combine flour, salt, and pepper and place in a paper bag. Dredge chicken wings, a few at a time, in the flour mixture.

Place oil in the heavy skillet to the depth of one inch. Heat oil to 350 degrees and fry wings, about one third at a time, until they are golden brown and crisp. Drain well.

In a small saucepan melt butter and stir in hot sauce and apple cider vinegar.  Pour mixture over chicken wings, cover, and shake until wings are evenly coated. Place on a serving platter along with celery and carrot sticks. Serve blue cheese dressing alongside. Makes 6 servings.

 

Blue cheese dressing:

4 oz. blue cheese

1 cup mayonnaise

1/2 cup sour cream

2 tablespoons lemon juice

2 cloves garlic, finely minced

1 tablespoon grated onion

salt and pepper to taste

Mash blue cheese and combine with mayonnaise, sour cream, lemon juice, garlic, onion, salt and pepper. If a smoother texture is desired, process in a blender or food processor. Chill. Makes about 2 cups of dressing.
