Pumpkin Roll

This recipe is thanks to my friend Lorraine and her mom!! 🙂 Everyone always loves this around Thanksgiving and Christmastime.
3 eggs
2/3 cup pumpkin
1 cup sugar
3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 8-ounce package cream cheese, softened
2 tablespoons butter
3/4 teaspoon vanilla extract
1 cup powdered sugar
Mix together first six ingredients. Spray cookie sheet with Pam, cover with wax paper and spray wax paper. Pour batter into pan, bake at 375 degrees for 8-10 minutes, till slightly brown on top.
Take a kitchen towel, lay flat and sprinkle well with powdered sugar. Flip cooled cake onto the towel, remove waxed paper, roll lengthwise and set aside.
Mix together next four ingredients. Unroll cake and spread filling over top, roll back up, roll onto clean sheet of waxed paper and then roll onto sheet of foiled paper to seal it, freeze.
