Serves 4-6
Slaw Dressing Ingredients:
1 Tablespoon olive oil
1/3 cup Greek Yogurt
1 Tablespoon honey
3 tsp hot sauce of choice
1/4 cup lime juice
1/4 cup cilantro, chopped
1/4 tsp kosher salt
Stir dressing ingredients together, refrigerate until needed.
Summer Slaw ingredients:
1 small head greed cabbage, shredded
1 green bell pepper, sliced thin
2 stalks celery, sliced into thin strips
1 avocado, diced
1.5 cups corn (I used frozen corn and microwaved it for 7 minutes)
1 15-oz can pinto beans, rinsed and drained
1/4 cup chopped cilantro
Combine slaw ingredients and toss with dressing. We ate this with the grilled chicken that I made in the grilled chicken bruschetta recipe.
